Ginger loaf recipe


Contrary to popular school ground opinion, a ginger loaf isn't what you call your strawberry blonde class mate, it is in fact a very tasty, very moist and very delicious little loaf. Feast your eyes on this gorgeous little ginger baby. Takes 10 minutes to throw together and 1 hour to bake to perfection. Also I think the fact that it's a loaf instead of a cake lets you pretend that it's just that tiny bit healthier. Ingredients: 175g butter  /  200g caster sugar  /  3 tablespoons golden syrup  /  250ml milk  /  250g plain flour  /  1 tablespoon ground ginger  /  1 teaspoon ground all spice  /  1 teaspoon bicarbonate of soda

Method: Preheat the oven 180°C and grease and flour up your loaf tin. In a small saucepan combine the butter, sugar, golden syrup and milk and bring to boil. Remove from heat and set aside.
Sieve the flour, bicarbonate of soda, ginger and allspice into a big ol' bowl. Mix well. Add the boiled mixture to the dry mixture, stir even more. Then pour that delicious sauce into a loaf tin.
Turn the oven down to 160°C land bake for 1 hour. Take him out and enjoy with a cuppa tea. Because ginger's need more loving.
